Shieldhill Castle Sporting Venison Confit of Carrot, Oxtail Pudding, Broad Beans and Wood Sorrel
"The sliced pink loin of venison rested on the confit of carrot surrounded by dressed green broad beans to one side and an oxtail suet pudding to the other nestling on a pool of sauce. The venison was of excellent texture and flavour as was the oxtail. There was a very good balance between the velvety texture of the venison and the robustness of the oxtail pudding. The flavours were excellent, overall an exemplary dish."
