"The strong flavour from the mushrooms was complemented by the sweetness and sharpness of the sauce. No flavour was over powered by another and all married together very well."

Cajun Spiced Salmon Fillet with Mange Tout Pine Kernels and Lemon Butter
"The salmon had a thin crisp coating of spices, enough to flavour the dish without overpowering it. On breaking with a fork the pink flesh flaked perfectly and the moistness was visible. The tastes were memorable."

Vanilla Crème Brule with Lemon Shortbread
"The texture of the French custard was rich and creamy with a silky finish. The caramelised sugar topping was thin and crispy. The lemon shortbread melted in the mouth leaving a sharp lemon buttery taste."
