“Terrine packed with meat, with the ham and duck in well-balanced quantity, to retain their flavour. The meat was evidently well-cooked to produce the quality of this terrine, which was then well assembled. Very attractive, a clearly thought out presentation.”
Tournedos of Scottish Beef Fillet, with Wild Mushroom Risotto
“Thoughtfully presented, with the beef topped with califlower purée and Parma ham, surrounded by the vegetables and thyme and tomato jus, with risotto to the side. A piece of quality beef, succulent and rich in flavour. A well-thought-out mix of beef, shallot and jus, with each component retaining sufficient flavour in its own right.”
Warm Apple Cake, Pecan Sorbet & Maple Syrup
“The apple cake consisted of a moist, light sponge outer layer that contained well-cooked apple. The sorbet was light and creamy and had a well-flavoured pecan taste. A good mix of sweet and sharp.”
