“Meaty chunks of flavoursome game were coarsely blended in this high-quality terrine, which was enhanced by the wrapping of moist ham. The well-balanced selection of beetroot leaves, lamb’s lettuce and baby spinach were the perfect foil for the rich terrine and the delicious chunks of kumquat, which had been caramelised to a soft stickiness.”
“Understated presentation allowing the ingredients to make the statement, with the venison sliced simply atop the selection of wild mushrooms, in a pool of fragrant sauce. The venison was of high quality, succulent and moist, with a velvety texture, and cooked exactly as requested. A moreish selection of wild mushrooms, sweet and earthy, complemented by oregano sprigs and a fruity peppery sauce. A harmonious marriage of texture, flavour and colour.”
“Exactly the right smooth, creamy texture with a scattering of vanilla grains clearly noticeable, and all topped with an aromatic, crunchy, burnt sugar layer. One of the most enjoyable crème brulées I have tasted, with its richness offset by the sharper flavour of the fresh raspberries. Accomplished cooking.”
An outstanding Baronial Mansion, Broomhall Castle was constructed in 1874 and was used as a private home until the 1930's. At that time it became a boys Preparatory School but was burnt down in 1942. It long stood empty but was restored in the 1980s.
We pride ourselves on the use of fresh produce and all food is prepared and cooked on the premises. Whether it be a party for 60 or meal for 2, we would be delighted to discuss requirements
