Foi Gras, Confit of Duck and Smoked Duck Breast
"The nougatine of foi gras was seasoned well and had a delightfully creamy texture. The in-house tea smoked duck breast was a joy to eat; smoked to perfection so as not to overpower the natural taste of the duck. A challenging dish, well constructed and pefectly executed."
Grilled Fillet of Halibut with a Crab Crust
"The halibut was cooked to perfection and translucent in the centre; its crab crust was of the freshest quality and brought the dish to life. The lemon butter sauce was light, seasoned well and of a good acidity to complement the dish."
Trio of Chocolate
"The chocolate fondant was light, the crème brulée was smooth on the palate and the white chocolate sorbet was refreshing. The chocolate flavours in all three desserts were tremendously satisfying. Clearly this was a skillfully prepared dish."
