"The shrimps in particular were firm and rich in flavour. The bonbon was more delicate, with a light crisp shell, and the salsa and salad complemented them well. A lot of care and skill went into the preparation and presentation of this dish."

"A really good balance of strong, complementary flavours. Even the spaetzle, which could have been overwhelmed by the other elements had been fortified by the use of herbs, and crisped beautifully. An excellent dish."

"A lovely rich, opulent pudding, with layers of flavour arising from the constituent parts. A good balance of thin, sweet base, slightly crispy at the edge, with good firm pear slices and a rich, glossy, caramel flavoured sauce. A very good example of a tarte tatin."
